Woodinville Rye Whiskey starts with pure, traditionally grown rye cultivated exclusively for the distillery on the Omlin family farm in Quincy, Washington. The grain is mashed, distilled, and barreled at the Woodinville distillery, then trucked back over the Cascade Mountains to the company's private barrel houses, where Central Washington's extreme temperature swings between hot summers and cold winters promote deep extraction of natural flavor from the oak. Before coopering, the barrel wood itself is seasoned in open air, rain, wind, sun, and snow for eighteen months to soften its harsh tannins, then slowly toasted and heavily charred to further enrich its desirable flavors.
