Sterling Napa Cabernet Sauvignon 750ml A cumulative expression of this renowned growing region, our Napa Valley Cabernet Sauvignon offers expressive character and appealing charm. Intense aromas of sweet cassis and black currant open the nose and are joined by gentle, well-integrated oak notes and suggestive hints of violet and black pepper. On the palate, long, ripe flavors of dark fruit are flanked by clove, cocoa and vanilla, with supple tannins and a long, smooth finish. Vineyard Notes: The diversity of this region is expressed in the fine layers of this wine. We sourced the grapes from a variety of vineyards throughout the Napa Valley American Viticultural Area (AVA), extending from as far north as Calistoga to as far south as Oak Knoll, from the hilltop sites in Pope Valley to those on the valley floor in Rutherford, with many in between. These vineyards, each with its own soil composition, microclimate and vine management systems, have distinct nuances of character that, together, showcase the depth of this renowned grape growing region. Winemaker Notes: For our Napa Valley Cabernet Sauvignon, we wove together an array of vineyards and grape varieties to build a well-balanced, well-rounded wine. We kept each vineyard separate during winemaking and then selected the lots that best complemented each other. To add depth and additional nuances, we took a Bordeaux approach, blending in approximately 15 percent Merlot for soft fruit flavors and supple texture; five percent Cabernet Franc for interesting notes of cedar, tobacco and sweet fruit; and a touch of Gros Verdot and Petit Verdot for complexity. The 2007 vintage was textbook perfect, with a long, even growing season and good warmth for small, concentrated grapes with vibrant flavors. Lower-than-average winter rainfall and a warm spring resulted in early budbreak, which was followed by moderate temperatures throughout the growing season. The cool conditions encouraged good sugar-to-acid ratios and even ripening in our Cabernet Sauvignon. Food Pairing: Pair this gracious wine with grilled meats or hearty pastas.
