El Jolgorio Cuishe Mezcal is a rare and exquisite spirit made from the wild agave Cuishe. This agave is known for its complex flavor profile, which is a result of its long maturation process. The agave Cuishe is harvested after 15 years of growth, and it is then slow-roasted in an underground oven. The roasted agave is then crushed by a mule-drawn tahona, and it is fermented with natural yeasts. The fermented mash is then distilled twice in copper pot stills.
