Claridad Mezcal Bicuishe Capón is a rare, small-batch expression that honors patience, precision, and the rugged beauty of wild agave. Handcrafted in Miahuatlán, Oaxaca, by Maestro Mezcalero Onofre Ortíz Ortíz, this mezcal is made from capón-harvested Bicuishe agave left in the ground to mature past flowering, concentrating flavor and character.

The Bicuishe is cooked low and slow in a traditional conical stone oven, milled by hand and small mechanical grinder, then naturally fermented with ambient wild yeast in cypress tinas using fresh well water. Distilled twice in copper pot stills, every step reflects the Claridad philosophy: slow mezcal made with ancestral respect and modern transparency.

Bottled at 45.5% ABV, it opens with earthy aromatics, subtle minerality, and wild herb notes. On the palate, expect soft smoke, dried fruit, pine, and layered florals with a lasting, dry finish. This is mezcal with depth wild, expressive, and deeply rooted in terroir.
