Balcones Cataleja Texas Single Malt Whiskey is made from 100% Golden Promise malted barley and represents one of the distillery’s most complex American single malt releases. The whisky first matures in refill casks before moving into decommissioned sherry-solera puncheons that previously held Moscatel, Amontillado Dulce, Oloroso, and Palo Cortado.

The whisky spends more than a year in these very old solera casks before moving into neutral casks for further integration. Balcones calls this process coalescence: the additional resting period allows malt, wine-cask fruit, oxidation, and oak to combine rather than remaining separate layers. Tasting Notes

Nose: Brandied figs, smoked paprika, sautéed apricot, olive wood, orange zest, cherry tobacco, and browned butter. Palate: Medjool dates, cashew butter, cacao nib, clove, eucalyptus, burnt lemon peel, pineapple, and cinnamon. Finish: Bittersweet herbs, coffee, cherry ice cream, spice, and mature wood.
