Heaven Hill 9 Year Old Double Mash: Rewriting Bottled-in-Bond Tradition
Heaven Hill Distillery, the world's largest family-owned and operated distillery and a longtime leader in Bottled-in-Bond whiskey, introduces a genuine first for the category: Heaven Hill Bottled-in-Bond Double Mash. This innovative 9 year old bourbon unites two distinct mashbills, traditional and wheated, into a single, remarkable Bottled-in-Bond release, joining the acclaimed Heaven Hill portfolio alongside Heaven Hill Bottled-in-Bond, the Heritage Collection, and Grain to Glass.
Under the guidance of Master Distiller Conor O'Driscoll, Double Mash is crafted from two-thirds traditional bourbon mashbill (78% corn, 10% rye, 12% malted barley) and one-third wheated bourbon mashbill (68% corn, 20% wheat, 12% malted barley). Both components are aged independently for a full 9 years, well beyond the four-year minimum required for Bottled-in-Bond status, before being brought together into one finished whiskey. The traditional mashbill contributes robust structure, spice, and richness, while the wheated component lends soft sweetness and roundness, resulting in a bourbon with more complexity and depth than either mashbill could achieve on its own.
True to the Bottled-in-Bond Act of 1897, one of the oldest consumer protection laws in American history, Double Mash is the product of a single distilling season, produced by a single distiller at a single distillery, aged in a federally bonded warehouse, and bottled at exactly 100 proof. With Heaven Hill's deep bench of respected labels, including Elijah Craig, Evan Williams, Larceny, Bernheim, Henry McKenna, Rittenhouse Rye, Pikesville Rye, Old Fitzgerald, Parker's Heritage, and Mellow Corn, Double Mash stands out as a genuine innovation within a category the distillery has long defined.
Tasting Notes
Nose: Toasted oak, honey, vanilla, white pepper, caramel, citrus peel, and light baking spice.
Palate: Honey, citrus oil, caramel, oak, soft wheat sweetness, gentle spice, vanilla, and toasted grain.
Finish: Balanced and warming, with lingering caramel, baking spice, oak, citrus, honey, and classic bonded bourbon structure.
Food Pairings
Double Mash's balanced profile of honey, citrus, and oak pairs beautifully with a range of dishes. Try it alongside roasted chicken, honey-glazed ham, or a charcuterie board with aged cheddar, or lean into its sweeter notes with citrus tart, baked pears, or vanilla bean crème brûlée.
Serving Suggestions
Heaven Hill 9 Year Double Mash is best enjoyed neat, over a large ice cube, or with a few drops of water to fully open its honey, oak, citrus, and spice notes. Its balanced structure also makes it a strong choice for a classic Old Fashioned or Manhattan, where both the wheated softness and traditional bourbon spice can shine.
