The Macallan TIME : SPACE Sherry Cask is a 20-year-old single malt, and the first whisky influenced by sherry casks seasoned with The Macallan’s own Valdespino sherry since the Jerez house came under its ownership. The Macallan calls it a time capsule from Jerez de la Frontera, Spain, and The Macallan Estate in Speyside, Scotland. It’s bottled at 44.8% ABV (89.6 proof) with natural color, and it’s the third chapter in the limited-edition TIME : SPACE Collection.

The Second Chapter of Sherry Cask Influence

The whisky was shaped by two distinct interactions with freshly sherry-seasoned oak. It began on The Macallan Estate in a selection of sherry-seasoned oak casks, then went through a marrying period in a selection of the first 200 sherry casks seasoned at The Macallan’s Valdespino bodega in Jerez. Those casks arrived at The Macallan in 2024 as part of its 200th anniversary celebrations. It celebrates a shared future with Valdespino and deepens the brand’s connection to the home of sherry wine.

Presentation

It’s presented in the collection’s distinctive circular vessel, which echoes the whisky’s passage through time. The presentation box is inspired by the palomino grapes used to make the Valdespino sherry that seasons the casks. Its circular interior mirrors the shape of the grapes, and its warm yellow hue recalls the Andalusian sun.

Nose: A medley of sherry-soaked raisins, figs, and Medjool dates, with sweet frangipane, cinder toffee, and hints of caramelized nuts. Dark chocolate truffles sit alongside cinnamon, star anise, and ginger.

Palate: Opulent and complex, with sultanas, dates, apricots, and rich ginger cake interwoven with treacle toffee, bramble jam, and chocolate-coated cherries. Clove and cinnamon sticks bring warmth, leading to cocoa nibs and layers of polished oak.

Finish: Warming wood spices and a hint of espresso, with waves of gentle oak.

The dried fruit and chocolate pair well with dark chocolate truffles, aged Manchego, and blue cheese. It also goes with ginger cake, sticky toffee pudding, and roasted nuts, and with a good cigar.
