After harvesting and pruning, the agave is processed at the historic La Rojeña distillery, which has been in operation since 1812. Here, the agave is cooked in ovens, with up to 300 tons processed daily to produce Jose Cuervo tequila.

Unlike many of Jose Cuervo's tequilas, Especial Silver remains unaged and contains at least 51 percent agave, resulting in a pure and authentic expression of the spirit. Bottled immediately after distillation, it maintains its beautifully balanced aromas and flavors.
