Elaborada con azúcar candi belga y envejecida en una selección de finos barriles de bourbon, Stickee Monkee es pionera en su propia categoría como "Central Coast Quad". El nombre Stickee Monkee es un guiño a la flor nativa de la Costa Central, Sticky Monkey, así como un reconocimiento a los monjes belgas que fueron pioneros en el estilo Quad.
Se ha dicho que la única constante es el cambio y lo mismo ocurre con las cervezas envejecidas en barrica. Partiendo de una receta similar, este Quad añejado en barrica evoluciona y muestra una cara diferente cada año; resultado del tiempo de crianza en barrica. El azúcar moreno turbinado de México agrega maravillosos sabores de melaza que recuerdan al azúcar candi belga. Tiene mucho cuerpo y una textura exuberante con expresión de barrica por todas partes; roble tostado, coco, cuero y rico tabaco puro.
