Product Description
Savage & Cooke Cask Finished Bourbon: Where Winemaking Meets Whiskey
Savage & Cooke Cask Finished Bourbon Whiskey is distilled and aged at Savage & Cooke Distillery on historic Mare Island in California, under the direction of winemaker and distiller Dave Phinney. Best known for his work with Orin Swift Winery and The Prisoner wine brand, Phinney brought his winemaking sensibility directly into bourbon production, and this release is the clearest expression of that crossover.
Once the bourbon reaches maturity, a portion is transferred into Dave Phinney's own Cabernet Sauvignon barrels sourced from Napa Valley for a finishing period of about two months. That final step layers in soft tannic structure, subtle red fruit character, and added texture, bridging the world of fine wine with traditional bourbon craft.
The Mash Bill and Aging Behind Savage & Cooke Cask Finished Bourbon
This bourbon is distilled from a mash bill of 75% corn, 21% rye, and 4% malted barley, with five batches of distillate blended together prior to barreling for consistency. It's aged a minimum of three years in new charred American oak before its Cabernet Sauvignon finish, then bottled at 100 proof (50% ABV).
