LALO High Proof Blanco Tequila is the limited-edition, full-strength version of the blanco that made LALO one of the most talked-about names in tequila. It is bottled at 54% ABV (108 proof) and made the same way as the original, with one difference: it is not diluted down before bottling. The result is everything people like about LALO Blanco, with more body, more agave and a longer finish.

LALO makes only blanco tequila. There is no reposado, no añejo and no barrel to hide behind, so the whole brand rests on how good the agave tastes. High Proof was the first new release in LALO's history, and it is aimed squarely at drinkers who want blanco at its most concentrated.

How It's Made

LALO High Proof is made in the Highlands of Jalisco from three ingredients: fully mature Blue Weber agave, deep well water and Champagne yeast.

• Harvest: jimadores hand-harvest fully mature Highland agave, usually six to seven years old, chosen for ripeness and sweetness.
• Cooking: the agave is steamed in traditional brick ovens for 20 to 32 hours, then rested for up to 18 hours.
• Extraction: a roller mill presses the sweet juice from the cooked agave fibers.
• Fermentation: a proprietary Champagne yeast ferments the juice over three to four days, bringing out bright, crisp flavor.
• Distillation: the tequila is distilled slowly and only twice, to keep the agave character intact.
• Bottling: the standard LALO Blanco is brought down to 40% ABV at this stage. High Proof skips that step and is bottled undiluted at 54% ABV.

The Family Behind LALO

LALO was founded by Eduardo "Lalo" González and David R. Carballido, two friends who grew up together in Mexico and share three generations of tequila-making experience between them. Lalo is the grandson of Don Julio González, and LALO began as the blanco the two shared privately with friends and family in Mexico before it was ever sold.

Lalo has described High Proof as a personal release, inspired by childhood memories of working alongside his father and grandfather in the agave fields.

• With a few drops of water: add water a drop at a time to bring out the sweeter, fruitier side.
• On a large cube: one big cube chills it slowly without watering it down too fast.
• Margarita: High Proof with fresh lime juice and a touch of agave nectar. The extra strength keeps the tequila front and center instead of getting lost behind the lime.
• Paloma: High Proof, fresh grapefruit, lime and sparkling water with a pinch of salt.
• Ranch Water: High Proof, plenty of lime and very cold sparkling mineral water over ice.

Because it is stronger than a standard blanco, you can use a slightly smaller pour in cocktails and still get more agave flavor.
