Four Pillars Fresh Yuzu Gin is a bright, aromatic, and (yes) fresh dry gin from the Yarra Valley in Victoria, Australia. Four Pillars first worked with yuzu in 2017, tried it again in 2019 and 2020, and after three limited-edition runs made it a permanent gin in the core range. The brand calls it its brightest, lightest, and freshest gin, and it’s bottled at 41.8% ABV (83.6 proof).

It has earned a Gold Medal at the 2023 San Francisco World Spirits Competition and Gold at the Global Gin Masters in both 2023 and 2024. Wine Enthusiast scored it 93 points.

What’s in It

The yuzu is locally grown in Victoria, and it brings a mix of lemon, mandarin, cumquat, and grapefruit aromatics. Finger lime adds deeper citrus. The Japanese-inspired supporting cast includes fresh ginger, turmeric, and sencha genmaicha, a green tea with roasted brown rice, for depth and a light toasty note. All of it sits on a canvas of strong pine-needle juniper, with coriander seed, angelica root, lavender, lemon myrtle for a lemon-curd touch, and dried Australian apple.

How It’s Made

Four Pillars distills in the Yarra Valley and builds every gin on juniper, then adds Australian botanicals and fresh produce. The yuzu is distilled fresh, which is where the vivid, perfumed citrus comes from.

Nose: Mild lemongrass and pine, with lemon, mandarin, and grapefruit and a sharp, perfumed yuzu lift.

Palate: Gentle lemon and lime, with juniper, ginger, and coriander. The tea and dried apple give a softer middle, and a fleeting lemon-sugar sweetness.

Finish: A warm, peppery finish with ginger, turmeric, and pink peppercorn, and a gently bitter citrus edge.

The yuzu and ginger pair well with sushi and sashimi, oysters, and grilled fish. It also goes with tempura, fresh salads, spicy noodles, and soft, creamy cheeses.

Serving Suggestions

Four Pillars’ own favorite serve is a Fresh Yuzu Highball: 45ml of gin over ice with about 100ml of soda water and a lemon wedge.
