2XO The Innkeeper’s Blend is the second release in the Icon Series from blender Dixon Dedman, co-founder and master blender of Kentucky Owl. The name 2XO means “Two Times Oak”: Dedman re-barrels hand-selected aged whiskey into new charred American oak, at both #3 and #4 char levels, to add intensity, sweetness, and complexity. For The Innkeeper’s Blend he starts with Kentucky straight bourbons from two proprietary mash bills from different distilling partners, one high-rye (35% rye) and one low-rye (16 to 18%), ages the high-rye bourbon for at least six years, finishes it in the new oak for at least six months, and blends four whiskeys to 104 proof (52% ABV).

The blend pays homage to the Dedman family’s hundred-plus years in hospitality as the previous owners of the Beaumont Inn on Kentucky’s Bourbon Trail. It launched in spring 2023 as a limited release, with no age statement and a suggested price of $100.

Nose: Butterscotch, red apple, cherry, cinnamon, and subtle earthy notes.

Palate: Caramel, vanilla, crème brûlée, plum, cherry, and light black pepper, viscous and rich.

Finish: Light, peppery spice, moving from caramel sweetness to ripe red fruit.
