Penelope Tokaji Cask Finish takes a nine-year straight rye whiskey and finishes it in casks that previously held Hungary’s celebrated Tokaji wine. The whiskey uses a mash bill of 95% rye and 5% malted barley.

Bottled at 104 proof and non-chill-filtered, the release combines rye spice with the honeyed fruit and late-harvest richness associated with Tokaji. Penelope lists ripe grape, brown sugar, honey, caramel, raisin, dark chocolate, apricot, peppercorn, and dry oak.

This is a limited Cooper Series release and should not be confused with Penelope’s bourbon-based wine finishes. The base spirit here is straight rye whiskey.
