Penelope Rio Bourbon is a Cooper Series straight bourbon finished first in American honey barrels and then in new Amburana barrels from Brazil. The mash bill contains 74% corn, 16% wheat, 7% rye, and 3% malted barley.

Bottled at 98 proof and non-chill-filtered, Rio layers bourbon grain and oak with floral honey, cinnamon, toasted wood, and the distinctive aromatic spice of Amburana. Penelope highlights vanilla, toffee, graham cracker, honeycomb, cinnamon sugar, and honeyed pastry.

The double-cask process distinguishes Rio from standard Penelope bourbon and from other Cooper Series finishes. Its sweetness and spice come from both finishing stages rather than added cocktail flavoring.
