This distillery, established in 2015, crafts its whisky using locally sourced ingredients, including water from Mount Cardrona and barley from the Canterbury plains.

This expression is a cask-strength single malt aged for five years in a combination of ex-Oloroso sherry butts and ex-bourbon barrels. The solera method used in its maturation results in a complex flavor profile with notes of vanilla, spice, and fruit.
