The name 400 Conejos comes from Centzon Totochtin, an ancient Mesoamerican belief in 400 rabbit deities, each said to represent the spirits of alcohol and a different way agave spirits could influence the drinker. According to legend, whoever drank mezcal would be guided by one of these 400 rabbits, though no one ever knew in advance which one they'd get, some bold and mischievous, others calm and reflective. 400 Conejos Joven is crafted by maestro mezcalero Don Tacho in Santiago Matatlán, Oaxaca, from 100% Espadín agave carefully selected once it reaches full maturity, typically 8 to 10 years. The harvested piñas are slow-cooked for three to five days in traditional stone-lined underground pits (hornos), heated by volcanic rock and wood fires, a process that imparts mezcal's signature smoky character while allowing the agave's natural sugars to caramelize. After cooking, the piñas are crushed using a horse-drawn tahona before fermentation and double distillation in copper stills, resulting in a clean, smooth, and approachable mezcal.
