Żubrówka is Poland’s best-known flavored vodka: a rye-based vodka infused with bison grass (Hierochloe odorata) from the Białowieża Forest, the ancient forest on the Polish-Belarusian border, home to wild European bison. The name comes from żubr, the Polish word for bison. Makers harvest the grass by hand and extract its flavor into a rye vodka, which gives the spirit a pale green-gold tint and a flavor unlike any other vodka. It’s made in Poland by Polmos Białystok.

Expect fresh-cut hay, vanilla, coconut, and almond, with a gentle herbal edge, softer and rounder than a neutral vodka. It’s usually bottled at 37.5% ABV (75 proof), and 40% in some markets, so check your label. In the US, Żubrówka is made to a reformulated recipe that has reduced coumarin, because bison grass naturally contains coumarin, which the FDA doesn’t allow as a food additive.
