A good cast-iron skillet gets better with seasoning, and so does the oak behind a bourbon barrel. Woodford Reserve Master’s Collection No. 22: Super Seasoned Oak puts that idea in a bottle. It’s a limited Kentucky straight bourbon matured in barrels made from staves that weathered outdoors for five to seven years, far longer than the months to a year most barrels get. Long weathering softens harsh green tannins, opens the grain, and concentrates the oak’s sugars, so the whiskey picks up deep spice, toasted sweetness, and dark fruit without the bite.

This is the 22nd release in Woodford Reserve’s experimental Master’s Collection, led by Master Distiller Elizabeth McCall, who isolates one of bourbon’s five sources of flavor each year and pushes it to the extreme. This year it’s maturation, and the barrel is the star. It’s bottled at 100.4 proof (50.2% ABV), with a nose of rich caramel and vanilla, almond, cherry, and cinnamon-dusted dried red apples, a palate of vanilla and caramel brightened with orange oils, cinnamon, and clove, and a sweet finish with warm cinnamon. It’s an allocated, limited 700mL release, a bottle for Woodford collectors, Master’s Collection completists, and anyone who wants to taste what wood alone can do.
