在 1996 年加入圣乔治之前，兰斯曾有五年酿酒师的工作经验。当他意识到酿造啤酒是蒸馏威士忌的一半时，他便放弃了酿酒师的身份，全身心投入到蒸馏的艺术和工艺中。
兰斯的酿造背景对我们威士忌的麦芽浆配方产生了深远影响——使用不同烘焙程度的二棱大麦，以散发出浓郁的榛子和可可香气，并用山毛榉和桤木熏制一部分未烘焙的大麦，以增加基调和额外的复杂性。
最终的威士忌从蒸馏器中取出后便表现出丰富的风味和诱人的香气，但各种桶型（用过的波本桶、法国橡木桶、波特桶和雪利桶）带来了更深层次的风味——创造出一种分层且独具特色的单一麦芽威士忌。
