Don Elias Extra Añejo 龙舌兰酒代表了龙舌兰酒工艺的精湛水平，于 2006 年推出。这款龙舌兰酒经过三年以上的陈酿过程，严格遵守必须在容量不超过 600 升的木桶或容器中陈酿的要求。
漫长的陈酿过程使龙舌兰酒呈现深红褐色，并赋予其媲美优质陈年烈酒的醇厚浓郁和复杂风味。陈酿过程中，还需通过添加蒸馏水来谨慎稀释酒精度。最终酿造出的龙舌兰酒口感极其顺滑醇厚，风味复杂，令人联想起上等干邑的品鉴体验。
