传说中，苦艾酒的发明者是瑞士纳沙泰尔州瓦尔德特拉韦尔的库韦村的亨罗伊德夫人，她用在山中发现的植物调制而成。后来，一位名叫皮埃尔·奥迪奈尔的法国医生在瑞士行医，他骑马穿梭于山间，兜售这种奇特却拥有专利的药物，并将其命名为“苦艾酒”。
奥迪奈尔医生去世后，他的两位当地姐妹完善了这道古老的配方，之后被一位名叫杜比耶少校的商人买下。杜比耶少校看到了这种药剂除了药用之外的销售潜力。然而，他对蒸馏技艺一窍不通。因此，他聘请了21岁的酿酒师亨利-路易·佩诺，于1798年协助他建立了一家小型苦艾酒酿酒厂。生意兴隆，亨利-路易·佩诺得以在1805年于蓬塔利耶创立了佩诺父子酒厂。第一家商业苦艾酒酿酒厂就此正式诞生！
亨利-路易·佩诺于1807年丧偶，并与杜比耶少校的女儿结婚。他们育有一子路易，路易从小就跟随父亲在酿酒厂工作。1827年，亨利-路易·佩诺希望扩大销售范围。他将市场分配给两个儿子：与前妻所生的长子爱德华，以及与埃米莉·杜比耶所生的亨利-路易。爱德华负责将佩诺酒出口到美国，而亨利-路易则协助在法国及其殖民地开展业务。
