皮埃尔·于埃卡尔瓦多斯·佩斯·奥日VSOP葡萄酒严格遵循卡尔瓦多斯AOC佩斯·奥日产区的指导原则。酿造过程始于将卡尔瓦多斯苹果酒在百年橡木桶中发酵12个月。之后，在名为“alembic á repassé”（重蒸馏器）的传统铜制蒸馏器中进行两次蒸馏，最后将蒸馏酒在橡木桶中陈酿三至四年，以发展其独特的风味，然后装瓶。
