A TOAST TO FAMILY TRADITIONS
Votre Santé wines pay tribute to Francis’s paternal grandmother, Maria Zasa, who began a family tradition of toasting “à votre santé,” meaning, “to your health,” each time she raised a glass. Created in her honor, Votre Santé wines are delicately designed as the perfect accompaniment to toast any family tradition, whether preserving centuries-old traditions, or creating new and lasting memories.
THE WINE
Our Chateau Red is a blend of traditional Rhône varietals, primarily Syrah, Grenache and Mourvèdre as well as a handful of other red varieties. We source our fruit from both warm and cool climate appellations, including Monterey, North Coast, and Lodi. This gives us fruit with different textural dimensions and a broader flavor palette for a more complex wine. Grenache prefers the warmer climate to help develop its strong, bold structure. Mourvèdre also thrives in the warm weather as it has a tendency to bud and ripen very late. This varietal requires clay soils that retain moisture to keep the foot of the vines wet. Finally, we grow our Syrah in a cool climate and try to pick at a lower brix so that the wine presents a lower alcohol level and pairs more readily with food. Our wine is then aged in older oak barrels, which helps tame the tannins and create a supple mouthfeel.
TASTING NOTES
Our debut release of Chateau Red offers a medium-body and soft, supple palate with fragrant aromatics and smoky notes. Nuances of leather and minerals mingle with sweet juicy flavors of black cherries, currants, and plums. It’s the perfect accompaniment to grilled lamb chops, ratatouille, and aged cheeses.
