Project Paso 2009 Chardonnay 750ml This Chardonnay shows its Paso roots from the get-go. Aromas of green apple, blanched almonds, and vanilla and oak nuance fill the glass. Light, crisp flavors of apricot and Meyer lemon come from the cold marine air that flows into Paso Robles through the Templeton Gap, while sur lie aging adds extra body and rustic richness. Aged for a balanced 8 months on half French and half American oak, our 2009 Chardonnay has subtle notes of vanilla woven into background flavors from the dusty Paso terroir. This wine finishes with a snap of zesty acidity and the soft, lingering flavor of apricot skin. Try our Project Paso Chardonnay with barbequed, bone-in chicken and grilled peaches for a rustic pairing that brings out the stone fruit flavors and sur lie richness of this fresh white wine. Crab enchiladas or pork chops would pair nicely as well, accenting the wine's crisp, green apple flavors.
