Noble Vines 667 Pinot Noir

Dijon ‘clones’ varietals have been arriving into California from the Cote d’Or, Burgundy, France in recent years. Noble Vines has been growing theirs on the gentle Monterey slopes in soils resemblant of its ancestral home. It is the fruit of these vines that have formed the selection from which Noble Vines 667 Pinot Noir has been crafted. Growing in tightly grouped clusters, the wind in San Bernabe has encouraged the fruit to form a thicker skin generating a much deeper color and delivering more delicious tannin layers and flavors than are usual in a Californian Pinot Noir.

Made by blending in an amount of Pinot Noir grapes taken from vines stocks 777 and 115 which also originate from Dijon and by utilizing careful viticultural techniques in its creation Noble Vines 667 Pinot Noir is possessed of extraordinary aromatics, great complexity of flavor and a very rich character.

Once harvested grapes are cold soaked and crushed into the ‘must’. Over several days a wine-making technique called a pump-over is used to bring out the color and flavor without loss of the bitter seed tannins. With gentle care the wine is fermented at low temperatures before being aged to perfection in French oak barrels to produce an extraordinarily well balanced cool-climate Pinot Noir.

Garnet-red and inviting, it has the fragrance of black cherries and plums layered with delicious notes of bitter-sweet cocoa. Lavish, soft silky tannins are paired with a balanced acidy which bring out the best and support the core Bing cherry and plum flavors. These flavors are showcased beautifully accentuated by graceful and tender hints of toasted oak.

Noble Vines 667 Pinot Noir is a wine of pedigree which can be enjoyed either on its own or with friends and a meal. It pairs extraordinarily well with salmon or with roasted spring lamb, leafy salads or cheeses.
