Napa Cellars Merlot
The 2011 Napa Cellars Merlot is an elegant wine that packs a lot of power and finesse. Grapes for the 2011 Napa Cellars Merlot are hand-picked from vineyards located primarily in the Oak Knoll sub-appellation of Napa Valley, a region ideal for cultivating Merlot grapes. The moderate to cool climate and well-drained soil supports an extended growing season resulting in elegant, complex and balanced wine.
Once harvested, the grapes undergo a 10 to 16 day maceration period and are fermented using the Délestage method. This process allows winemaker Joe Shirley to extract copious amounts of color and flavor from the skins, while avoiding excessive extraction of bitter or astringent flavors. After the fermentation process is complete, the wine is aged for 15 months in exclusively French oak barrels.
