Vago Pechuga Mezcal by Joel Barriga is a distinctive expression that showcases the rich traditions of Oaxacan mezcal craftsmanship. Produced by mezcalero Joel Barriga Aragón, this artisanal mezcal is crafted using 100% Espadín agave, harvested from fields certified as Bat Friendly—a certification recognizing sustainable practices that support healthy bat populations, vital for agave pollination.
The production process involves cooking the agave in an underground earthen oven for three days, followed by crushing with a horse-drawn tahona wheel and fermentation in open wooden vats. Distillation occurs in copper stills, with an additional distillation using the traditional pechuga method. This involves adding organic apples, pineapple, bananas, tejocotes, fresh corn, sugar cane, and farm-raised chicken breast during the second distillation, imparting a unique flavor profile.
