Made by unorthodox means over 2 full years, The Dissident is fermented in total isolation and aged for a full 18 months resting in ex-wine casks used for Pinot and Cabernet.
This ‘molly-coddling’ does much to explain why it’s an annual release or limited availability.. But as you taste, you’ll know, without doubt, it’s worth it!
Medium bodied, The Dissident is a wild blend, deep red-brown with a light, cream colored head, opening with aromas that describe the time spent in delicious wine barrels. The fragrance is laced, but not overpowered by the cherry.
The sweet, sour fruit, puckers the mouth nicely while the oak of the barrels make the palate slightly dry. This oaky dryness goes on at the finish making a complex yet cohesive drinking experience.
The Dissident is perfect served with cheeses. Perhaps baked brie, spaghetti carbonara or macaroni and cheese… maybe finish off with bitter dark chocolate?
